
green beans, tonnato sauce
This dish started out as an experiment when I was bored one day from the usual WFH lunch. Squeaky hot beans, charred in a pan with some capers, form the perfect foil to a silky smooth tonnato sauce. Tonnato is basically a brilliant tuna-based creamy sauce, often drizzled on rare beef in Italy. In my recipe it has a veg sidekick, and is all the better for it.
Ingredients
- 1 can of tuna
- a handful of green beans trimmed
- 2 anchovies
- a handful of capers
- mayo
- lemon
- olive oil
Instructions
- Blitz up a can of tuna with the juice of half a lemon, one anchovy, a big squeeze of mayo and glug of olive oil.
- In a screaming hot pan char a handful of green beans with a few tablespoons of capers in a glug of olive oil.
- Spoon over your green beans and capers onto a puddle of tonnato.
