I had such a fantastic Cooking Conversation last year with @chef.liam; he taught me a Trini dish: cou cou and blackened shrimp. It is completely delicious; the spicy shrimp pair perfectly with the comforting cou cou. Please please make his recipe and give Liam a follow; he's a super exciting chef. Ingredients
- a handful of okra chopped
- an onion chopped in half
- a small bunch of thyme
- 100 g butter
- 100 g cornmeal
- 150 g shrimp shelled and de-veined
- 1 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 0.25 teaspoon onion powder
- 0.25 teaspoon dried thyme
- 0.25 teaspoon dried oregano
- 0.25 teaspoon ground black pepper
- 0.25 teaspoon cayenne pepper
- 0.25 teaspoon salt
