Bored of cereal for breakfast at work? Making this on a Sunday is the ideal meal prep breakfast. Take a bit of extra time cooking everything down so the flavours really get a chance to develop. Spicy, crispy and deeply savoury; this is a breakfast to look forward to every morning.
45 minutes, makes 4 work breakfasts
Baby potatoes, halved (750g)
2 peppers, cubed
1 red onion, finely sliced
Mushrooms, diced (250g)
6 rashers of smoked streaky bacon, cubed
Spinach, a big handful
Salt & Pepper
1) Pre-heat the oven to 180C. Lay the potatoes on a baking tray with a glug of oil, sprinkle of paprika and oregano, and season well. Roast for about 20 minutes, until the potatoes are cooked through and blistered.
2) Put a saucepan on a medium heat and add the bacon with a touch of olive oil. Render the fat down until the bacon goes dark and crispy. At the peppers, onion and mushrooms, along with some salt and pepper. Turn down and cook slowly with the lid on for about 10-15 minutes. You want everything to turn sweet and tender.
3) Once the veg and bacon and cooked, throw in the potatoes with a handful of spinach to wilt it. Portion up ready for the week. At work, reheat in the microwave for 1 minute and serve.
