Vegan January going well so far! This cauliflower dish is a real winner, inspired by the dish they serve in @wagamama_uk. Have a play with the seasoning and adjust to your liking (dark soy sauce mixed a pinch of sugar works well if you can’t find sweet soy). Serve with nutty brown rice for a great vegan work lunch!
Takes 30 minutes, makes 4 work lunches
INGREDIENTS
1 cauliflower, broken into florets
1 lime
1 clove of garlic, minced
A thumbsized piece of ginger, cut into thin strips
A spring onion, finely sliced
A handful of coriander/ cilantro
Sriracha
Sweet soy sauce
Salt and pepper
Olive Oil
METHOD
1) Preheat the oven to 200C. Line a baking sheet with parchment paper and lay on it the cauliflower florets.
2) In a bowl mix the garlic, the juice of a lime, a good squeeze of both sweet soy sauce and sriracha. Drizzle the cauliflower with half the sauce and bake in the oven for 20 minutes until charred.
3) Toss the cooked cauliflower in the remaining sauce along with the ginger, spring onion and coriander.
